About the farm:
Ridgeback is situated in the northern part of Paarl in the Western Cape. Paarl has moderate to warm temperatures. The farm extends over 65 hectares of which 35 hectares are under vine.
The name is derived from the Rhodesian Ridgeback dog, also known as the “Lion dog” which originates from Southern Africa, as well as the Ridgeback dogs kept on the farm. The pedigree, character and stature of the dog is reflected in the wines.
I have not yet had the opportunity to visit this farm, but I was lucky enough to have met the winemaker, who is passionate about the farm and his wine.
About the wine:
This 100% Cabernet Sauvignon is a deliciously bold wine with a classic Cabernet Sauvignon taste. It is deep garnet in colour, which lightens in colour towards the rim. This wine was oaked for 18 months in 29% new, 38% second and 33% third fill French oak barrels.
It’s a full-bodied and aromatic wine. The flavours and aromas noticeable include dark plum, dried herbs, a hint of mint and some cigar box notes. It’s a dry wine, with medium acidity and firm ripe tannins. It has a mouth covering feel and minerality on the finish which makes for a perfect ending.
Due to the boldness of this wine, it would be best paired with red meat, rib-eye or venison. This wine can be matured for up to 10 years - if you can bring yourself not to drink it before then!
With its 14% alcohol and attention demanding yumminess, it would be advisable to enjoy this one with food, but hey, no judging here if you choose not to!
